Chicken Soup that actually is good for you and your taste buds!
Chicken soup is always the go to when a person is feeling sick. Unfortunately, that usually means a can of condensed nastiness that is anything but good for you. In reality, eating a bowl of the canned stuff is just giving your immune system more to fight than the cold virus it’s already battling. Just look at the ingredients in a standard can of Cambell’s Chicken and Rice:
Chicken Stock, Rice, Chicken Meat, Carrots, Contains Less Than 2% Of: Salt, Chicken Fat, Celery, Monosodium Glutamate, Water, Cornstarch, Sugar, Onions, Vegetable Oil, Dried Chicken, Modified Cornstarch, Yeast Extract, Natural Flavoring, Dried Chicken Broth, Beta Carotene For Color, Soy Protein Isolate, Sodium Phosphate, Soy Lecithin. Shred all the meat you can off your bird and place in a bowl or dish and place in the fridge until time to make your soup. Start by chopping your carrots, onions, celery, and garlic:
Heat the olive oil in a large stock pot until it just starts to simmer. Add the carrots, celery, and onion and saute until just soft, about 6 minutes over medium heat. Sprinkle a little salt and pepper to flavor. Add the minced garlic and cook 1 more minute, stirring constantly so that the garlic doesn’t burn:
Add the carton of broth and the shredded chicken meat, stir to combine. Heat until it starts to boil, and then reduce and simmer. In a large skillet, heat two tbsp of avocado oil and then add the frozen cauliflower rice. Stir often and cook until the cauliflower is tender and all of the moisture has evaporated from the pan:
Stir the rice into the soup and continue to simmer over low heat. Add the butter to the skillet you just used for for the rice and once it melts, add the sliced mushrooms and saute until tender, then add to the soup:
Whisk the two room temp eggs in a bowl with the lemon juice.
