This weeks recipe features a new product I received for my birthday this year. I have always wanted an instant pot. I had seen others using them and understood how much easier meal prep would be with one of these. So this weeks recipe features a new twist on Mexican chicken.
All you do is place 5-6 boneless skinless chicken breasts in your instant pot and the add all the ingredients. Add 1 cup of water.
After I placed the lid back on the instant pot I set it to the meat stew setting which gives 35 minutes of cook time. Once done you place one chicken breast in the meal prep container and shred it. Then you add approximately 1.5 cups of the cauliflower & broccoli hash, and rotel. You get the end result in the picture above.
