It’s been some time since my last article. Summer has been busy, vacation with my family, gym time, and getting in my miles on my bicycle.
This edition of Lee’s Faith & Fitness brings you Lee’s Egg White Muffins. You’ll need eggs, onion, red bell pepper, cherry tomatoes and Mrs. Dash seasoning.
Directions:
- Spray olive oil spray in muffin pan.
- Preheat oven to 350 degrees
- Separate the egg whites of 2 eggs
- Put egg whites in muffin tin
- Add 2 cherry tomatoes, 1 tbsp each diced onion and bell pepper per muffin
- Place pan in oven and leave in until eggs are done
Each serving is about 83 calories. 2 muffins equals 1 serving.
I hope you enjoy my recipes. Remember this, sometimes it’s better to focus on what’s right in front of you instead of the top of the mountain. Not that the mountain top isn’t important, when you start a journey you’re not gonna achieve your goals in the first day or week. You have to take baby steps first.
