Two meals that seem like they would be complicated and take hours to prepare are BBQ and meatloaf. But, if you change the meatloaf from a loaf to patties and find some store bought sauce that is actually healthy, you can combine both to make a quick and delicious meal.
I actually found the basis for this recipe years ago in one of those mega-mart mailers where they give you coupons for the ingredients. This coupon was for Stove Top Stuffing of all things, and yes, I would dump a whole box of this stale sawdust into my patty mixture. Let’s take a look at what that adds to your plate, shall we?

What in the actual you-know-what is that? If you take one thing from this series, it’s never to eat anything that makes you sound like a first grader missing their front teeth when you try to pronounce the ingredients. If I didn’t tell you that it was stuffing, it could be confused for chemicals that etch concrete floors.
Of course, that had to go when I brought this meal back into my new life. Everything a box of stuffing can do, a fourth of a cup of almond flour can do just as well. Roasted cauliflower with baby purple potatoes hit with a bit of melted cheese and all natural sugar free bacon make a great side dish, giving you high quality protein plus all the benefits of cruciferous veggies.
