In my previous life, Beef Stroganoff was only possible if it came out of a box of Hamburger Helper. Looking at the ingredients, the only thing that product was helping was my waistline expanding and future medical bills to skyrocket.
Ingredients
Enriched Pasta (Wheat Flour, Niacin, Ferrous Sulfate, Thiamine Mononitrate, Riboflavin, Folic Acid), Dairy Solids, Cornstarch, Salt, Wheat Flour, Contains 2% or Less of: Natural & Artificial Flavors (Including Beef), Maltodextrin, Hydrolyzed Protein (Soy Wheat, Corn), Calcium Lactate, Onion (Dried), Sugar, Cultured Buttermilk (Dried), Citric Acid, Lactic Acid, Sour Cream (Dried) (Nonfat Milk (Dried), Cream, Cultures), Garlic (Dried), Vegetable Oil (Canola, Soybean and/or Sunflower), Yeast Extract, Tomato (Dried), Spices, Modified Cornstarch, Wheat Starch, Vinegar (Dried), Paprika, Dextrose, Guar Gum, Turmeric, Monoglycerides, Parsley (Dried).
It also tasted like that list reads…confusing and weird. There’s a plethora of modified this and hydrolyzed thats, and they can’t even make up their mind on what type of inflammatory oils they are using to make this disaster of a dinner offering.
Now that I make my own from scratch stroganoff, it actually tastes good, isn’t full of ingredients from a science experiment gone wrong, and my internal organs can recognize and use what I’m sending them for fuel.
It’s also just as easy as it is from a box. Easier, actually. If you have ever tried to open one of those packets of dried powder and sent a dust cloud flying in the air, you know what I mean.
I also use ground turkey for all my dishes like this, as it’s not as greasy, has a mild flavor that takes whatever spices you want to throw at it, and cuts the fat and calories. However, if you want a bit of real beef flavor, I use frozen grass fed beef sausage to up the flavor content.
It’s an easy and quick trick to put the beef in your stroganoff.
The ingredients are simple, the nutrition is great, and the taste is fantastic. The next time you are in the grocery store contemplating using Hamburger Helper, remember to ask this question:
Turkey Beef Stoganoff
Ingredients:
3 packages Heart of Palm noodles – Angel Hair or regular
1 32 oz carton low sodium chicken stock
1/2 package grass fed cream cheese
1/2 cup shredded parmesan cheese
2 lbs pasture raised ground turkey
5 links frozen grass fed beef sausage
2 green peppers, thinly sliced
1 yellow onion, thinly sliced
1 package shiitake mushrooms
3-4 cloves garlic, diced fine
1 cup grass fed plain yogurt
1/2 tsp sea salt, 1/2 tsp black pepper, 1/2 tsp onion and garlic powder
1 tbsp olive oil
Instructions:
Drain and rinse the noodles, then place in a large stock pot with the chicken stock. Set over medium heat and bring to a boil. Let it simmer while cooking the other ingredients:
Dice your veggies:
Brown the ground turkey with the spices in a large skillet until cooked through. Drain any excess moisture. Cook the sausage links in the microwave for 1 minute and then slice into bite size pieces. Brown in the skillet that you just cooked the turkey meat in, and then transfer both to a bowl covered with foil to keep warm:
Place the olive oil in the same pan and place over medium heat, then saute the green peppers, mushrooms, and onion. Sprinkle with a pinch of salt and pepper. Once they are soft, add the garlic to the pan and cook for another minute, stirring constantly. Add the cream cheese and stir until melted, then add the shredded parmesan cheese and stir until smooth. Add the turkey and beef sausage and heat through. Turn off the heat and stir in the plain yogurt:
Drain the noodles and mix with the stroganoff. Serve with your choice of veggie as a side. Roast broccoli works well.
