Lee’s Smoked Chicken Salad
Happy back to school days, everybody! This edition of Eating Crow features something that I’ve been wanting to try – Smoked Chicken Salad. It’s a great way to get a good portion of protein, your veggies, and some greens.
This is a simple recipe to follow and the only thing you really have to cook is the chicken. I like to smoke my boneless chicken breast with applewood charcoal from Kingsford and use chunk pecan wood. I season my chicken with low sodium zero-sugar dry rub from Sweet Swine O’ Mine. I will smoke my chicken until it reaches an internal temperature of 165-170.
This salad features a bed of chopped romaine lettuce, no-salt black beans, no-salt diced tomato, corn, and sliced radishes topped with sliced smoke chicken. If you notice, I did not include dressing because the calories vary but I highly recommend the 60-calorie Greek ranch dressing from Hidden Valley. The neat thing about this salad it is very easy to change out your protein with other things like sliced pork tenderloin or even a can of albacore or chunk like tuna.
