Lee’s Shrimp Tacos
This edition of Eating Crow brings you the surf to without the turf.
Introducing Lee’s Shrimp Tacos. This is an amazing recipe. Probably the worst part of this is the sodium content. But it still has a good healthy balance of protein, and healthy fat, and a little more carbs but not bad.
I use My Fitness Pal for nutrition macros and to build my recipes. After I enter my ingredients in the recipe builder, it gives me the nutritional information below.
For the cooking process, I sautéed my onion and bell pepper in coconut oil over medium heat for about 2.5 minutes. Next I added the shrimp and let them go about 3 minutes per side since they were pre-cooked. As for as the tortilla, all I did was heat it in the microwave to make it softer.
I’ll be posting more often after the end of a July as I have one more cycling event, in Scott, at the end of July.
Also, I’m down to 280 pounds. That makes my total weight loss 173. This journey has been amazing – so much so, I’m journaling my story with hopes to get it published as a book. More to come later.
