Lee’s Rice Bowl Alternative
- 1 cup chopped cauliflower
- 1/2 c each chopped onion
- chopped bell pepper
- diced tomato
- black beans (low sodium)
- 2 tbsp tomato paste
- cumin
- coconut oil
Melt about 1 tbsp coconut oil in skillet or large pot.
Add cauliflower, onion, & bell pepper first and stir together and let simmer for no more than 1 minute.
Add tomato, black beans, and tomato paste. Stir until tomato paste has blended down adding nice red color to mixture. Add a dash of cumin.
